I maintain that DLC is rarely done well. I have my favourites, mostly because they add hours into the games I play - and bring more into lore / story. Borderlands / Souls games come to mind. Anything that was cut from release and then sold separately I stay far away from. Forza 5 pissed me off nicely by excluding the top performing leaderboard cars for DLC.
As is the norm. People will go mad over a delay, not knowing that it may end up better for it.
Nothing wrong with a postponed game. Doom 3 was a "when it's done" title, and remains a great game till today. I'd prefer a game to be polished than see so many patches like with Halo MCC.

Demon's Souls was owned by Sony, and Sony never opted to put it on the PC. Bloodborne is technically Demon's Souls 2, even shares lore with it. No announcement has been made that it's even considered for PC. It may happen, but I have my doubts. Dark Souls differed in that it was meant to be multiplat, that was from the first game. Scholar of the First Sin will follow suite.

It's not going on PC since Demon's Souls was PS3 exclusive, why would Bloodborne even hit PC? Nonsense imo.
Difficulty isn't everything imo. I'm sure there will be a hard game. Hell, I struggled when playing the alpha earlier this year. There are also plenty of lore additions, like the ties to Demon's Souls. VaatiVidya picked up on a couple of these already. Souls is not about difficulty, it's about the experience of exploration and the overcoming of self over adversity.
I guess some won't want to wait. Not sure if the money's worth paying a few days earlier. I prefer to see it that waiting is a good way to gauge if the game is decent.
