Don't own an Xbox or Switch, so never tried the games listed. Don't care for racing anymore to be honest, only enjoyed the first few Need for Speed titles.

X1X is a big mistake in my opinion. Too powerful and not really iterative - which means the X1S will drag it too far down. PS4 Pro is a bit more powerful and shows relatively minor improvements - so the difference is small compared to the standard model.
In the end, whoever buys X1X pays a lot more than PS4 Pro and will get the same in term of 3rd party title quality. But Sony has exclusives - which tips the balance completely.
