I appreciate this mate, i can see where you are coming from. I also think its down to what the player is in the mood for. You cant really nip on dark souls for a quick session, you need to set aside a decent amount of time and not rush. Where as Skyrim, for example, you can just explore at your own pace and quick save at anytime etc.
Combat is a big deal for me in any rpg and this area is where elder scrolls as a series has always lacked, maybe due to the first person aspect ...
Oh sorry, i was reading comments about 'but skyrim is old, ofcourse a new game can top it' so i thought i would compare games of a similar age, genre etc and give my reasons for my choices

Dark souls and the witcher 2 already make skyrim redundant for me
Much better combat, story, lore etc imo
Edit and replay value, challenge, less bugs (if any at all), no hand holding big arrows showing you where to go (darks souls specific)

For example i feel instances etc are bing gradually introduced and taught to me, wondering if crafting etc is similar?

I finished a second play earlier this week and have gone on to demon souls while we wait! Ive played a bit of it before but at launch and i didnt get far!
It feels alot darker and more eerie than the world of dark souls :)
