Well luckily this is a daily thing, up to PSASBR releases, so inevitably there will be a bio for a character more up your alley.

Yeah, I used to play games in Japanese to try and improve my ability to learn Hiragana, Katakana, and some Kanji, but I always just kept playing the game instead of focusing on the language since it was so much to take in.

No one thinks PS All-Stars is going to outsell CoD, but it's a quality game, and should do relatively well for a new and unknown IP.
Having Sephiroth without Cloud seems odd, but I can't say I don't agree that would be a better choice.
