The thing I find hilarious is that when a big company announces DLC, everyone calls them out, but when a smaller company does it like From Soft or CD Red they get a pass?

Because it is? It's content unrelated to the main game, completely optional. It's intent is to get players to come back to the game, even way after the initial release. They just want to keep the IP alive for as long as it's possible.
