To late for Insomniac, but Quantic Dream, Lightbox would be a good choice. Hell, with Take Two wanting to be bought Sony could be a candidate to be a buyer!
I'd like to see Jak and Daxter HD as I've never played them, but with a Naughty Dog label it must have been good!
The problem for me is that I don't really like The new Need For Speeds much. And playing playing the PS2 era games on a modern TV is pretty terrible.
I think the issue is partly do to gamings history, as it started out pretty much as a kids toy. Today the media just can't seem to get this juvenile image of gaming out of its head so it's easy to blame gaming on violent crimes and degrade it to the public even when gaming is as big as any other medium of entertainment.
Well gamers (trolls) are forever trying to convert every other gamer to their console are are atleast bashing the other console. Just saying.

While I agree GH can be alot of fun. Harmonix created Guitar Hero 1 & 2 (2 is in my opinion the best). Then Activision let Harmonix go and they joined EA and they continued their series under the Rock Band name.
Guitar Hero was then continued by Red Octane and Neversoft. So in a way, Rock Band is the original.

The damage of the cars was awesome too. From what I remember it was GTA IV level destruction (very dynamic) and it also had a video editor on console which was brilliant!
