Because the only one you can find anywhere is the Series S, the X sells out instantly every time it is made available. Shortages notwithstanding Microsoft has done a poor job making Series X available.

The original Horizon launched in late Feb 2017 if I recall correctly, and BOTW came not long after. I wonder if history will repeat itself.

Assuming it doesn’t get canceled, I was lucky enough to get one preordered through GameStop. Had to get the amiibo through Play-Asia.
Not surprised, the original games were awful too.
They probably can’t find a PS5 to buy either. The install base is probably somewhat small there.
