Looks fine on all games for me in HDR. Try change your videosettings to default and turn on HDR again and see if it solves it.
I know quite a few people that have PS4 / PS4 Pro systems too and noone have ever mentioned any issues at all with Firmware 5.0 so it seems you have something going on in your system. You can check so all cables are inserted all they way too so you don't have a bad connection to your TV.

I guess I try out the PS3 version and if the resolution and black bars is bothering to much on my 4K TV i just wait for a christmas sale or so and buy the (complete) PS4 version.

I just noticed I already own this game on PS3 through PS Plus. Any bug fixes or improvements in the PS4 version making it MUCH better or should I just play it on my PS3 ?
I would like an opinion from a Dragon's Dogma player out there that played through the PS3 version because it seems like a great game what must have flew under my radar when it was released on PS Plus.
Edit: Just saw that PS4 version includes ALL DLC released for this title... Hmmm...
Why post a video in 2017 with 720p resolution ??!! Incredible fail. Especially for games that supports PS4 Pro and Xbox One X. Makes no sense at all. 1080p up to 4K should be the norm for previews/reviews like this imho.

My point is simple:
Why should I need to buy anything for my money when the function should been there from day one.
Sony released 2 hardware kits within weeks and OG PS4 / Slim PS4 and the PS4 Pro supports HDR but not the VR box released a few weeks from the Pro. That's bad planning for sure.

In a few weeks I will sit and play GT Sport on my 4K TV in full glorious HDR. Suddenly I feel the urge to take a few spins 1 vs 1 in my VR. I need to stop playing the game, turn it off, turn of my PS4 Pro. crawl on the floor changing HDMI cables at the back of my Pro. Restart the Pro and restart the game and choose VR and I start playing it. After playing for a while my friend sends me an invite to race him (non VR). I say ok wait a sec...

I can't say I regret buying it day one as VR is THE BEAST !! so much fun it's incredible. But this "lack of HDR passthrough"-crap has been a thorn in my side from day one. Counting regular and VR games I bought over 50 so far this year alone and I buy them digitally so I can jump from game to game as I see fit. Crawling on the floor changing HDMI-cables in my homecinema setup a few times a day don't cut it so VR is taking the backseat for now and this is a real shame tbh...
And one more and last thing :
You say you can play in HDR @ 60Fps, BUT (!!!) Can you do it will full , like in FULL color depth ?
Without the above spec's my HDR wont support the full HDR range that my Samsung 4K TV can handle, why would I want to gimp it for the future by using some low budget thing in my high-end homecinema setup ????
If I can't get my HDR up to 2500-3000 nits it's holding my TV back and I don't pay to take a step back a...

Quality over quantity. But why read a review when you can download and play the 4-day trial from PS Store right now ? Makes no sense to wait for a complete stranger to try the game when you can do it yourself.
Unless you don't own a PS4 to begin with and you are in this PS4 article with a PS4 only game trolling your guts out.
I have spent the last 3 hours playing GT Sport now and its a blast !! I love it and the driving is spot on. :)
