The tweaks such as SweetFX still require values to be put in manually. We don't credit Photoshop when we edit a picture in it. The photographers come up with these values and see what's right - it's also much more than finding a good angle for a screenshot. You have to take in positive and negative space, and plethora of other things in order to produce a good screenshot or photograph.

Those are not the "very same graphics running real time." You can clearly tell that the CG demo employs higher polycount, better shadowing, better particles, better post-processing effects and other things that just aren't possible on consoles or PCs even today.
Want to know why? because it was never meant to run in real time. A character in that CG video was probably 100,00 polygons alone.

They say they are very complex - it's pretty much what they used to build the game but there is documentation for it.
