Everyone I've talked to says that being a game tester sucks, which is a bummer considering it sounds like it would be a great job.

I wouldn't worry about the Wii and PS2 versions, they shouldn't detract from the quality of the 360/PS3 versions.

I was quite impressed with the graphics, but it's possibly just me. In terms of the environments, well, I found them stunning.

Go into Options > Advanced > Video > Advanced. Now check to see what the "Screen Percentage" or something like that is. If it's less than 100%, that's why it looks like a PS1 game. Check the resolution as well.

"4D" graphics is such a misnomer for this type of thing. Yes, these are textures that are dynamic and change with time. But anything that shows movement or change through a 3D environment over time, even Mario Kart 64, could technically be called 4D.
Plenty: Lead Designer, PR Manager, Art Director, Writer, Voice actor... In general, it's all about the company - at an ideal company, all of the jobs are good jobs. Unfortunately, there are some not-so-good business practices going on out there.
