Actually I'm pretty sure the Kingdom hearts team went with Nomura to work on the FFVII remake. I do agree with you that Tabata is doing great things with FFXV and I believe it will be an amazing experience.
Stand By Me fits this game better than anything else honestly and they DID orchestrate this cover. This was arranged for the game. The film of the same name is why they are using it as well which fits the theme of this game like a glove.
There isn't content cut from the game. There was content cut from when this was supposed to be a multi part FFXV game series. They used the stuff they couldn't fit in for one game and made a film out of it. I am absolutely fine with this. This movie looks gorgeous.
You thought Dead Space 2 was just okay?. I thought it was the best out of the series. The first one is an amazing experience as well of coarse I consider both 2 of the greatest games of all time. The third one I wasn't too happy with. I didn't hate it but it started to feel very distant from what made the first two so amazing. It is time for a 4th entry now for current gen consoles and pc. I think everyone agrees with me on this.

Nomura barely did any work on this Foxtrot. Nomura barely had anything started before Tabata took over. 4 years of ACTUAL WORK was accomplished by Tabata and his team.
Tabata and team have done so well here. It is just insane the amount of work they have done for this game to bring Final Fantasy back to the forefront of the gaming world. So happy right now.
