Open worlds lack verticality and level design. They also dont have the fantastic setpieces that define non open worlds.
Open worlds also suffer from repetitiveness and they tend to be populated with fetch quests and collectables.
God of war has fantastic level design because it did not go open world. Not every game has to be open worlds.
Variety is essential to any form of art or entertainment.

Souls is about level design and RPG elements. NG is about pure action, they have different emphasis on what they want to do. Trying to shove some story into a Ninja Gaiden would just ruin the game.

Its got a boring open world that is empty with ubisoft style collectable korok seeds that add nothing to the system. And terrible weapon breaking that hampers the combat.
FFXV had issues that was fixed(many still persist) and the people are not blind to this aspect of the game.
But when it comes to gow none of its fans want to hear anything critical or any flaws.
