This plug and play experience is SUPER overrated when it comes to something like this.. If someone is spending $400 on an expansion card for their console that person is NOT a casual gamer, they are an enthusiast/hardcore/dedicated gamer. So this idea that Plug and Play would have any real bearing on the viability of being the better option simply doesn't matter, its ALL about price and performance

Witcher 3's combat was always stiff and lacking, its absolutely the case that the combat doesn't hold up today ESPECIOALLY in comparison with other games released since then, That doesn't make these games BETTER than Witcher but deffo in the combat mechanics hell yeah!!

I dont know if i agree with your statement of "Other than a few tweaks, the games will most likely play the same" because the simple truth is we dont know the extent of the remaster... The games have not aged AT ALL well and are actually bad controlling games by todays standards same with the mechanics themselves...
