As for statistics, being number 1 in every single game around is only a matter of playing more than other players. Back when i played PES, the first thing to do with each game was to import the last game's data and spend some time tinkering with the edit options. When you're a fan of a certain club or league, you know exactly their names or even appearance and edit it accordingly.
Of course, then there's the mods. Or just save the trouble and get FIFA but i won't interefere with personal taste, i've been there, i adored PES and it's not the lack of licensed teams ...
Your statement would be true if we were in 2006 or earlier. Right now PES feels like a cartoon and FIFA more organic, both in looks and gameplay.

You have specific skills if you want to conceil yourself. A sniper position isn't just about the weapon, if you go to Electronics skills, you have Sensor Jammer, Motion Sensor, Acoustic Locator and much more. You also have Improved Stealth skill, Improved Shot Detection and so forth.
As for the sniper rifles, you can install a suppressor on the 2nd tier rifle, the 50cal rifle can't equip it due to the huge ammo.

Although that is a valid argument, DLC adds to an existing game to enhance it. What this does is make a new game altogether that renders SF4 completely useless.

If i were to guess i'd say it's because they didn't really changed anything from COD4. It's basically the same game, with a few minor graphical improvements, of course, so why would they need a beta if they know exactly how it handles by now?
After seeing the options you have for interior views, i would say that there could be a solution.
You can set your view on the premium cars to:
Wide - seeing the whole dashboard, steering wheel and hands
Zoom - Where you only see the top of the steering wheel
Extra zoom - You basically just see the windshield.
So let's say they'd just offer the Zoom and Extra Zoom interior views on standard cars. Problem solved!
