There is still some random encounters in FF XV (like the patrol poping up from no where).
I find it natural , you should try reading/watching some matiars-art fantasy mangas , those kind of things are pretty common in those kind of manga.
There is alot of hidden and side things , but you may be able to find them on the wikia.
FF XV isnt out yet , this may be why.
They made this in 2/3 years (and maybe more,they dont show everything to the public) , watch E3 2013 vs TGS 2014 video (while pressing pause) and see how huge the difference is.
