I played GOW and Spiderman before RDR2. It's a pretty brutal change of pace. But, as always starting a new game, it's about acclimating to the physics, gameplay, and pace. Once acclimated, though, these games can really shine. It doesn't take as long as it might seem at first. The fact that we have these great games that take time to adjust is a great sign for the industry bc it speaks to a dynamic industry.
Pacing is going to be an ongoing challenge for games of this size, scope, and density. There's also something to be said about gamers adjusting to the pacing of games. I just finished playing Spiderman for the last several weeks. Mounting an unruly horse and galloping around for a few minutes is a lot different than swinging through skyscrapers. It takes some time getting used to the new physics, button schemes, traversing system, and story pacing. Will the game be fun 50+ hours in? ...
