GTX 560 is the recommended video-card for BF3 if you'll check Nvidia's GPU analyzer.
Any GPU higher (including it) can run ultra. And that's pretty cool considering GTX 560 is now affordable.
Hmm, you can try troubleshooting the problem by isolating it. Run other games in crossfire and if it didn't crash, there's a chance the issue might only be in BF3. Else, the problem is on the GPU setup and not with the applications.

If you'll check Rockstar's history of releasing triple-A titles, it loves Xbox 360 and PS3 dearly, making it highly inappropriate for them not to reveal the game on consoles especially for a mega game like GTA V.
