I don't see an issue with this. We already have a "retro lancer" and could very easily introduce some "older" variants of the more traditional guns, like a dated Shotgun, older Snub etc, with the excuse that they are phasing them out for the newer Chainsaw Lancer and Gnasher etc that become standard from Gears 1 onwards.
As for enemies they could do something similar with "pre" variants etc, I think a dose of creative thinking can get past ...
