Art direction is more important than graphics, I've seen plenty of games that do not have insanely high texture resolutions but still look amazing.
I cannot judge Dark souls 2 compared to Demon Souls, however compared to Dark Souls 1 it is definitely harder. Just from the top of my head; You only get one Estus flask to start with (none if you don't speak to the right person). When you die, a percentage of your max health is locked off - up to 50% of your health. Just imagine curses in Dark souls 1 happening every few times you die. Well, now that people have started playing the full game, it's time for me to tune out of any more Dark Souls 2 news. I want to know absolutely nothing when I hop into this game.
I don't see the problem, they are available in the game.

I think it's more to do with video games becoming a bigger industry and more people playing video games than video games being more realistic. Every new technology and medium is criticised before being accepted; TV, Movies etc.
