1) They changed Ratchet's character development. In the original, he was abit of an ass, but started to change as events progressed, a dynamic character. In the remake he was portrayed as not at all like that, a character with very little flaws, almost static throughout the entire thing.

Ah, the ESA. The same lobby that said downloading abandonware constituted copyright infringement, and equates digital archiving to piracy. So of course they would say that gamers would want to go digital, screwing the customers out of more money from owning a physical item with value. First off, Blockbuster business was RENTING media, not usually selling it. That's a huge difference.
Second, digital media is essentially valueless. You can't re-sell it, so you're essentially throwing money to something that is incapable of holding value. Physical items hold value, digital items don't.
I honestly wonder if some people got confused hearing that BotW is playable in emulator and automatically thought the Switch. I could see that happening.

The low-quality is definitely because of ancient compression techniques from the day. Remember that Sega CD was (I think) the first home console to use the CD format. To fit the amount of video on it, it had to be ridiculously compressed. If it was shot on film, then it can be rescanned into HD (which the trailer seems to show). This makes me super happy cause it could pave the way for the rest of the batch to possibly follow to everyone else's dismay but my bliss.
