Quad Cores right now are really only useful for video or audio encoding/decoding. Most game benchmarks show Quad Cores performing on par or sometimes slightly worse than their Dual Core brethren. Once software, and especially games, start getting designed for multi-core systems we'll see better performance from our Quad Cores. So i would agree with you, right now most gamers don't need Quad Cores, and the most value lies in the Dual Core parts for now.
Crysis is very GPU intensiv...
Fair enough point about lower resolutions, in the end it's really dependent on what resolutions you want to run, go with the 9600GT if you are content with lower resolutions, go with 8800GT if have anything bigger than a 19" widescreen.
