Because the Xbox 360 has 512Mb RAM and the more RAM means more memory to use hence most Xbox 360 versions have better textures and PS3 versions have washed out lower res textures in comparison. But if different clever techniques are used for the PS3 versions the memory issues can be disguised.
Sony knows this and that is why the PS Vita is going to have 512Mb RAM.
