I think the people that actually played Uncharted 3 beta would tell you that it actually has a lot of differences when compared to Uncharted 2.
I actually remember a lot of bitching and complaining on the forums because thanks to these changes we actually had to relearn a lot.

Same here, I only have a PS3 and love the Uncharted series to death. But that doesn't stop me from going to some of my friends house and playing Gears of Wars all I want!!!

I can say that this is exactly the reason why I decided to get a PS3 instead of a 360. Sure Gears of War and Halo are PLAIN AWESOME franchises, but that's basically it when it comes to exclusives (that are worth mentioning, I mean).
I don't think it would be that easy just to adopt this technology. Remember that is not only consoles, but tvs, monitors, everything is based on polygon textures. So to adopt think we would need new tvs, probably to create a new disc format which would demand new players, etc...
And this is only what I can think of without getting too technical.
Look at the bright side, this will create more jobs for the chinese... Wait, that doesn't help us at all. Nevermind.
