Developers don't immediately switch to a new project when they finish one. They usually take a break, go on vacation and whatnot, before they dive into a new project. Even so, various parts of the team works on new projects at different stages.

I think there is no 'ideal' controller. Controllers have their limitations. What should be done is have games designed that take into account those limitations.
Look at Earth Defense Force. All the buttons it used were the trigger and bumper buttons and the sticks. You didn't have to ever move a digit away from something to do something else, which could cause failure.

Enslaved was ok and Epic Mickey is pretty garbage. The camera is just so awful, though your reasons behind liking it make sense. It's just not for me.
