OK firstly, just fast forward and rewind in normal mode, but with the menu visible, when the camera (triangle button) begins to flash thats when you know to pause the game( by pressing x) and stop and look around(by pressing triangle and using the sixaxis to adjust the camera).When you find a symbol just hold the camera in that position until it fills up in colour in its entirty
