I really like this style of games, and I think the main reason for that (and for many others) is the Nostalgia factor. It may "look like crap" or "be more easily done" but for all of us who got to enjoy the classic games of the PS1 era, these low-poly experiences sure bring back some good vibes (Oh, and also because we don't care about other people's "well thought" opinions, we simply play games because we like games)
