They record your audio and send it to a server in the cloud. And yes, a lot of these companies have had people listen to the clips to help to improve how the system interprets commands.

I avoided this game for awhile because I didn't think I would care for it either, but I finally played it because of Game Pass and I absolutely loved it.
The combat is actually really fun. I know it's not Dark Souls or anything super complex, but it is fun.
