A remake is simply the same game rebuilt from the ground up. Resident Evil (Gamecube), The new Crash Bandicoot trilogy and Shadow of The Colossus PS4 are prime examples of remakes. You could arguably add a few things to a remake, like in RE on GC where they added new defense mechanics and a few new areas, things that don't inherently change the game. But once you start changing core mechanics, it becomes something else entirely, i.e. a reboot. Neither RE2R or FF7R are remakes.

Itsuno wanted to take a break from the series to make Dragon's Dogma. The suits at Capcom are the ones who pushed for the extreme changes to the series, not cause they were sick of it but because they wanted the sales numbers of games like Gears of War. I highly doubt any of them (the suits) play video games, or have any actual respect for the medium. They are in the business of money not video games. Which explains why, in recent years past, they've had such a hard time making money...

DMC is a series of skill based action combat games. The controls are only clunky if you're button mashing. The combat is actually smooth as silk if you master it, which happens to be what those games are all about. The primary reason DmC failed is because it didn't require any skill from the player. DMC3&4 are best in series and you haven't played either of them so stop pretending. DMC3 is one of the best action games ever made, second only to Ninja Gaiden 1&2.
