There was stealth and disguise shown in the most recent 'in game' trailers released. It looks like you may be able to choose how you do it still, but you never know.
Hitman looks pretty cool, but yeah you never know with dev released 'footage' what it really looks like in real life.
Mass Effect 3 was on display, and that's not out until 2012 either.
