Well, it depends on type of game. I play Guitar Hero games on hard (Not expert) yet play DMC and Ninja Gaiden on easy-nomral settings.
Sometimes game's hard difficuly destroys the fun while other times games easiness takes out all the fun. A good balance between easy and hard like God of War.
Difficulty makes a big difference for gamers with limited time.
I play games to have fun and relax and don't have hours to spend doing the same thing over and over again.
I usually play games through on a easy-normal setting first and then depending on how much I enjoyed the gameplay I will often re-play the game at a harder difficulty.
I usually play games on the normal setting the first time through (except Halo 3 i started on Hardcore). After I finish the game I will usually go back and play through on a harder difficulty level. I think only the competitive hardcore gamers are the ones that laugh at people that play on easy. Also, very competitive multiplayer games like Halo 3 unless you play it on Legendary you are nothing compared to them in their eyes.
