Does the switch 2 perform different in docked mode vs. handheld mode?

yes, in handheld mode the system is limited to conserve battery and keep heat down. In docked mode the system runs a little more unlocked due to the constant power supply and the additional cooling built into the dock.

They already did fix the issue with the Gamescom demo of the handheld version here at the Canada Expo. I'm sure they will continue to improve it 'till launch.
