Every Switch racing game should come with GameCube controller support that way you have the option to use analogue triggers (which should be a thing already on default Switch controllers from Nintendo)

They register as analogue on PC but I'm not sure if it would on a game that supports it on the switch. Trials Rising has analogue trigger support through the GameCube controller so that would be a good game to test it with.
