I think games should always be a challenge. If anything, less games should have an easy mode.
I get slightly aggravated when game reviewers complete a game on the easiest level.
I hear what you saying, but disagree. Firstly, I love difficult games, I would say more games should include an "insane mode." Having said that, I don't have the time today, to spend on games that I had 10 years ago, that means I cannot play certain games, like DS according to you, 'cause I don't have the time to work it all out. I would love to still experience it without having to spend weeks on it.

Dark souls 3 isn't even that hard, sure the very first boss is a challenge but after that it's pretty straight forward.
