
The gaming industry is as big as it is partly because of the annual franchises that release every year. If you were to take those yearly installments away, the launch schedule would be pretty bleak. That said, not all companies believe yearly is the right beat for their brands and in the end, yearly or even once in a while all work the same.

Because they fortunately still make games, not just franchise entries. I absolutely hate how EA and Activision made annual releases a "normal" thing in this industry and truly hope that Fallout 4 will be more successfull than the other shooters this year because Bethesda really deserves it.
Because great games of such giant scope take more time than that.
It's not just Bethesda. Why do you think Rockstar don't release GTA every year? I mean thank God they don't, and it shows.
Because Bethesda actually cares about the quality of their products.
